德式老鼠酥饼陪伴的新年 Chinese New Year with Little Mice




2020老鼠年,在想要做什么新年饼的时候,突然想到可以迎合鼠年做老鼠造型的饼干。
于是老鼠造型德式酥饼就这样诞生了!
费时但是好有成就感! 有点舍不得吃掉它们 TT


准备材料:

     


无盐黄油     Unsalted butter     125g
糖粉             Icing sugar              40g
低筋面粉     Cake Flour              85g
马铃薯粉     Potato Starch        125g
奶粉             Milk powder           10g
可可粉         Cocoa powder          5g
黑芝麻粒     Black sesame        适量



酥饼做法:

1. 黄油室温软化
     Butter softened at room temperature



2. 糖粉40g  过筛
Sifting icing sugar 40g





3. 稍微搅拌黄油和糖粉,再用搅拌机搅打至微白
Slightly stirring butter and icing sugar mixture, and use eletric mixer to beat the butter and icing sugar till light




4. 低筋面粉85g ,马铃薯粉125g ,奶粉10g  过筛
Sifting cake flour 85g , potato starch 125g , milk powder 10g

 

5. 用刮刀拌均,搅拌成面团
Stir the mixture with a spatula , form a soft dough

6. 倒入可可粉  一起拌均匀
Pour in cocoa powder and mix together





7. 用保鲜膜包覆面团 摊平 放入冰箱冷冻15分钟
Wrap the dough with plastic wrap Flatten Freeze for 15mins





8. 把面团分成各15g的小面团,轻揉成圆形
Divide the dough into small pieces of 15g each, gently roll the small dough into ball shape





9. 按成三角形 
Press into triangular 





10. 一边斜着揉 揉成锥体
Roll sideways till become cone shape






11. 从可可粉团取两小粒当耳朵,一样揉成圆形 ,轻轻压扁,放上刚才的圆锥面团
Take two small pieces from cocoa dough, roll into balls as well, press it slightly, put on the cone shape dough





12. 巧克力耳朵 - 黑芝麻眼睛 - 巧克力米须须 - 巧克力鼻子
这样的次序 整体比较容易对称
Choco Ears - Black sesame Eyes- Choco rice Whiskers - Choco Nose
This order is easier to be symmetrical overall





14. 预热烤箱150°  我预热了5分钟
Preheat the oven at 150° I preheat for 5 minutes





15. 预热完毕就要送小鼠们进去噜!温度150°烘烤约15分钟
After preheating, send the mice into oven. 
Temperature 150°, baking for 15mins





16. 新鲜出炉的老鼠酥饼烘烤完毕!
Done baking !
